I think you just might have something here.  My girls love sweet potatoes and I will occasionally had them a raw slice when I'm loading the dehydrator.  It never occurred to me to give them a big one to chew on.  I would think it would keep them busy for a little while.  I wouldn't want them to eat them whole thing, but for a little bit it might work.
