I know I have mentioned before that my Goldendoodles coat has been dry , I started a grain free food,
added Cod Liver Oil Supplements and also have read that digestive enzymes can help to get more
vitamins from there food, any suggestions on if they would help and which one to try.

Holly had loose stools; not diahrrea, just occasional loose stools. A breeder friend recommended Dogzymes Biotin and her stools became normal. It is supposed to enhance the metabolism of fats and proteins. It seems to work just fine.
Many years ago, before we knew that fats were not good for you, I used to give my Springer Spaniel, who was prone to dry skin and hair, a spoonful of bacon grease in her bowl every couple of days. You could see the difference.
However, I no longer eat bacon and would not give Holly pure grease!

We have used several and have been very pleased with Wholistic Pet's Digestive Enzymes. Additionally I really like their Canine Complete Joint Mobility which does have digestive enzymes in it. When moving to enzymes specifically for a stomach or digestive reason I recommend the straight enzymes until you get that under control. In your instance you may be fine.
