I was just wondering when you all switched to 2 meals a day. Seymour will be 16 weeks tomorrow. Lately I noticed he isn't eating his lunch until 2-3pm and eating his dinner closer to 8pm. I am wondering if we should alter his meal schedule to 2 meals/day instead of 3. But I worry it is too soon.

Annabelle was not a big eater for the first 6 months. I think at about 4 months or so I started with 2 times a day hoping she would be hungrier and more ready to eat if there was more time between meals. She is almost 2 now and she has her last meal around 6pm and won't even look at her breakfast any earlier that 8am.
It's not too soon. Four months is about the time that many pups are ready to switch to two feedings a day, and it sounds like Seymour is ready. :)
I agree this is just about the right time to move to two meals...just follow the feeding guidelines provided for your food to be sure he continues to get the right amount of calories per day.
Mine were about 4 months old as well. But neither of mine would ignore a morsel of food for a second since they were puppies so yours is telling you he's ready by not wanting to eat lunch till later. As long as he's getting the recommended amount in those 2 servings, he'll be fine. His tummy is big/mature enough to handle it now. Good luck. Let us know how it goes.
We feed at noon and 5. I think most people feed earlier. Our dogs tend to be "ready" to eat about an hour before I feed them no matter what the time we feed them. Because they used to get all worked up and start begging for food earlier and earlier each morning. So we quit doing breakfast and moved their two meals to a lunch and dinner.
I'd be willing to bet you are the only one on this whole website whose dogs get their first meal of the day that late. It's breakfast and dinner for the vast majority.
Annabelle eats at 8am and 6pm. I did a lot of experimenting and that seems to be what works best for her.
Jack gets breakfast between 7:30 and 8:30 a.m. (I'm retired and rarely get up before 7:30) and dinner at 5:30 p.m.
My girls are fed breakfast between 7:30-8:00 am and dinner is usually around 6pm.
Yesterday didn't go as planned. I ended up keeping his breakfast bowl down longer cause he didn't finish it most of the day, and then gave him dinner at 5:30, which again, he nibbled on. He didn't finish till close to 10pm. I was worried that he wasn't getting enough food if I pulled his bowl up.
