Dogs also bring pollen into the house on their coats, which will affect people with pollen allergies even if they don't have dog allergies.
I agree with both Stella and with Ginny,
1. A doodle was bad choice for anyone with allergies or any type of issue with shedding
2. Her adult coat is going to affect you even more than her puppy coat
3. Any reputable breeder will take the puppy back; in fact, there should eb a clause in your contract to that effect. However, you will not get any money back.
And I will add to that the fact that doodles often cause allergic reactions and are RARELY hypoallergenic...with your symptoms that are so serious, a doodle was a bad choice--but maybe find a nice poodle pup and promise your son that a new pup will be coming soon...
If you haven't already called Rey's breeder you should. If the breeder is truly reputable there will be money refunded with the return of the dog. Your reaction to the dogs fur is SERIOUS.

I am so sorry about this whole situation, but you have to take care of your health. Your breeder wasn't ethical because your pup looks flat coated, so will shed, among other things like bringing in pollens from bushes and trees. Please contact Doodle Rescue Collective - here is a link: http://doodlerescue.org/page/rehome-assistance-form . They will foster and re-home your doodle to a family that will be for sure able to keep her. They seriously screen adopters so that the best fit for the puppy will be found.

I feel bad for your family, especially your little boy, and for Rey. I guess it doesn't hurt to ask for at least a partial refund if you have the test results to back it up. I would however be surprised if they agreed to it. I hope it all works out for you somehow.
