Help! Finding a flat coat Goldendoodle?

Hi there! My husband and I are adopting a DOOD in hopefully the next few weeks.... and we're really hoping we can find a little puppy that will grow into more of a "flat coat" retriever look. Is this something super rare? Or will breeders know right away if a puppy will have that flat golden look? We have been speaking to one out of state that showed us the photos below of an adorable little guy, but its so hard to know and trust someone out of state.
If anyone has any experience with flat coat doodles or knows how to look for them, please let us know! We're so excited to get one! :)

Haha oh wow!! They do change but my goodness is he the cutest guy ever!! How cute!! His huge at 1!!

It is a she--Daisy and she ended up at 45 pounds--and YES, they change a LOT!
