I almost always shoot in RAW because I like the control that RAW gives me over shooting in JPEG.
One of the things that I like best about shooting ij RAW is opening the images into Adobe Camera RAW (which is part of Adobe Photoshop, Adobe Bridge and Adobe Lightroom...
I didn't realize until recently (since I usually don't shoot in JPEG), that I have many of the same controls available when editing JPEG images by accessing the Camera RAW Filter under the Photoshop "Filters" drop down menu. However, I have done some shooting with my iPhone 6S+ which doesn't allow shooting in RAW and I have taken advantage of the Photoshop Camera RAW Filter.
There is a plethora of controls available within the Camera RAW Filter and I use many of these. However, the two controls I like best are:
1. The white balance Eye Dropper. When placed on a white or neutral gray area of your image, the Eye Dropped will pretty well balance the color of light in your image.
2. I love being able to rotate images and to correct distortion while seeing my corrections as I am making them. Here is an example of correcting distortions on an iPhone image...

I started shooting JPEG (because my first digital camera (an Olympus point and shoot) did not have RAW capability. When I bought my first DSLR (a Canon 10D - many years ago) I started shooting in RAW + JPEG because, at first, I just didn't trust RAW. Shortly thereafter, I noticed that I was never touching the JPEG images I had captured and began shooting only RAW. The only JPEGs that I edit are ones from our rescue volunteers and I edit these first with the Camera RAW filter.
There are many things that I like about RAW but, generally it is the control I have; whether that be control over light balance or the ability to adjust the perspective in the image.
