Wanted to share a really quick & easy doodle treat.  Mac & Lucy loved them!

SPINACH BALLS

3/4 cup whole wheat flour

3/4 cup quick-cooking rolled oats (didn't have quick cooking used steel cut)

2 Tbsp grated cheese (any kind)

1 cup frozen spinach, thawed but not drained

1 Tbsp olive oil

 

1. Preheat the oven to 350 degrees. In a bowl, combine all of the ingredients. Using your hands or a small ice cream scoop, shape the mixture into a golf ball size treats. Place on a lightly greased baking sheet. 

2. Bake the spinach balls for 30 minutes. Let cool, then refrigerate for up to 1 week, or freeze for up to 6 months.

 

 This is the second time I've made these & decided the golf ball size was too big so I used a measuring teaspoon & shaped the mixture into the size of a large marble. I was in a hurry & forgot to lightly grease the baking sheet & add the olive oil to the mixutre - didn't seem to make a difference.

no problem - they are so very easy & tasty too!  The timely part is waiting for the frozen spinach to defrost & roll them into balls.
