This is an appetizer that my neighbor makes when she has Bunko at her house.It is delicious and is always the first thing to go!!
Saucy Water Chestnuts
1 can sliced water chestnuts (I think it is 8 oz)
1 lb bacon cut into thirds
Sauce:
½ Cup Hellmans Mayo (It must be Hellmans)
½ Cup light brown sugar (I use the brown sugar Splenda to keep the sugar low)
¼ Cup Chili Sauce
Preheat oven to 350. Wrap each chestnut slice with a piece of bacon & secure with a toothpick. Place on a broiling pan. Bake for 30 min. & drain. Place in a baking dish.
If you want you can stop here, cover the baking dish & store overnight in fridge.
When ready to serve, preheat oven to 350. Remove cover from dish, mix ingredients for the sauce & pour over the chestnuts. Bake for 20 minutes. Serve in the baking dish or place them in a chafing dish to serve
When our daughter first told me about this recipe, I admit that it really didn't sound all that great. But when she made it for us this weekend, I immediately told her that I had to have this recipe. We could not stop eating it.
CAUTION: It can be addicting!!
FRESH SALSA
2 Cans of Black Eyed Peas - Drained
1 Can Shoepeg Corn - Drained
1 Can Rotel Tomatoes with green chilies (Mild) - Drained
1 Can Rotel Tomatoes with Habaneros - Drained
1 Green Pepper - chopped
2 Green Onions - sliced thin
4 Roma Tomatoes - chopped
1 Small Bottle of Zesty Italian Dressing
Mix all ingredients in a Large bowl and refrigerate.
Serve with Tortilla Chips (Scoops work best)
