Sausage Ring
This is actually a Christmas Tradition that has been going on for many a year at our house. We have this for breakfast Christmas morning after the gifts have been opened. One of our son-in-laws loves this so much, that he says this is the only thing he wants for Christmas - a Sausage Ring of his own!
2 lbs pork sausage (bulk)
1 1/2 cups Ritz cracker crumbs
2 eggs, slightly beaten
1/2 cup milk
1/4 cup minced onion
1 cup finely chopped apple (peeled)
1 cup shredded cheddar cheese
Combine all ingredients. Mix thoroughly. Press lightly into greased bundt pan.
Bake one hour at 350. (I usually add more cheese to top during the last few minutes of cooking)
Turn out onto shallow pan and drain excess fat.
Serves 12
Sounds like a lot of chopping, but I chop it all in my food processor (separately), including the Ritz cracker crumbs and it really does not take that long to make.
