This is a recipe that my husband will make when the weather starts getting a little cooler and it will surely warm up your bones! He has been making it for over 40 years and everyone always seems to enjoy it.
JERRY'S RIGATONI
1 lb Hot Italian Sausage cut to approximately 2 ½ inches
1 Center cut pork chop (Bone-in) approximately 1 ½ inch thick
1 (14.5 oz) Can Tomato Sauce
1 (12 oz) Can Tomato Paste
½ tsp Salt
2 tsp Coarse Ground Black Pepper (See Note)
Rigatoni Noodles
In a 6 Qt sauce pan, put pork chop in the center surrounded by Italian sausages. Cook on low heat until sausages and pork chop are browned. Remove pork chop and sausage and set aside.
To the drippings in the pan, add tomato paste and stir.
Add tomato sauce and stir. Add a 14.5 oz can of water and a 12 oz can of water and stir well.
Add Salt and Pepper and stir well.
Let boil for 15 minutes to thicken.
Add pork chop and sausages back to pan and simmer on low for 3 hours.
Serve over cooked Rigatoni Noodles with a tossed salad and garlic bread.
Note: Add more or less pepper according to taste and how hot you want the sauce to be
