 With the crazy cold weather we are getting, I have been in the mood for some good chili. I found this recipe that is healthier than what I used to make with hamburger. You can adjust the seasonings to your taste - we usually add more to add a little heat and spice.
Veggie Chili with Ground Turkey


Prep time: 15 minutes
Cook time: 35 minutes

Ingredients:
1.25 lb ground turkey,  browned in frying pan (Shady Brook Farms 1 lb roll)
1 tablespoon canola oil
1 medium onion, chopped
4 carrots, sliced
1 green bell pepper, and/or red pepper chopped
1 zucchini, chopped (I have also used yellow squash & it works as well)
2 garlic cloves, minced
1 tablespoon chili powder
1/2 tsp ground coriander
1/2 tsp cumin
1, 16-ounce can kidney beans, rinsed and drained
1, 16-ounce can black beans, rinsed and drained
1, 15-ounce can tomato sauce
1, 14.5 oz can Delmonte diced tomatoes , Zesty Chili Style, in juice
1, 28 oz can Rotel tomatoes with green chilies

Instructions:

Heat oil in a large soup pot over medium-high heat.
Add onion and carrots and sauté 5 minutes. Add green / red  peppers and zucchini and sauté another 2 minutes.
Add garlic and sauté 30 seconds
Add Ground Turkey
Add chili powder, cumin & coriander
Add remaining ingredients and bring to a boil
Cover, reduce heat, and simmer 30-35 minutes or until the vegetables are tender.
Serves 8; Serving Size = 1 cup
