Since you have to board her anyway, it won't hurt, but I doubt it will accomplish that much. I certainly would not do it if I did not have to board.
I have been through several obedience courses and they all seem meant for the humans more so than the dogs. It is more strategies of eliciting desired behavior than actually creating that behavior for you. Even if they were to train your doodle some to recognize a few commands, you still need to know how to elicit that behavior from your dog.
I am aware of some good programs. They key is that the trainer also works with you so that you can continue to implement the strategies at home.
I agree that it is mainly the human that needs the training but that being said, a board and train might be good and would at least keep her occupied while you are away. It is important though that the trainer uses methods that you approve of with her. There are many different training styles.
