Well, you've got a problem, because between the formulas you've listed, he's had just about every protein there is. You're going to have to go with one of the exotic proteins, like rabbit or kangaroo, and that means treats, too. He cannot have anything that contains any animal protein other than whichever one is in his food.

I'm surprised the specialist didn't give you guidelines for doing a food trial. Of course, I'm also surprised that he/she thinks it is a food allergy, lol. Jack's specialist never helt there was any possibility of that.
I believe a food trial is usually done for a minimum of 8 weeks, and I think 12 weeks is standard, but again, you should check with the specialist on that.
Lucy's food trial guidelines said to feed the Novel protein food (they recommended the hydrolized formula's but that's another story) for 8-12 weeks until all the itching had completely stopped. I contacted them at about 30 days and said she had stopped did we need to keep doing this or could we continue to the next step. He said if she had stopped we could continue. At that point we were to start testing one item at a time (Chicken, Beef, Egg, Dairy, Fish, Lamb, Rice, Corn, wheat, Soy). You added a small amount of each of these items, one at a time for 7-10 days. If she reacted you stopped, until the itching stopped again, then you went to the next item. If after the 7-10 days you had no itching you knew that item was ok. Acceptable treat items were pears, apples and carrots. Make sure the heartworm meds aren't flavored with beef or anything as well.
