I am in the process of finishing the transition from Orijen/Acana to Zignature, currently using the Lamb formula.  I remember reading that the omega might need supplementation and that only certain flavors are recommended.  Is there any information on what to add to this food (we do plan to use a few different proteins at least), and what to avoid now that there are thirteen different formulas to choose from in dry food?

All the Zignature formulas are LID (limited ingredient diet) except for one, Zssentials. Since many people use Zignature becauswe their dogs have sensitive stomachs, I often tell people to avoid the Zssentials formula; but there is no reason to do so IF your dog has no digestive issues. 
I also recommend staying away from the "exotic" proteins like goat and kangaroo for one reason: in the event that your dog ever develops an immune-mediated disease like Inflammatory Bowel Disease, or food allergies, you are going to need to find a food that contains a single protein that your dog has never eaten before. So don't expose him to every single protein out there or you may have a major problem down the road.
Otherwise, there are no "better" or "worse" formulas in the Zignature line. 
As far as supplements, all of the formulas meet the AAFCO standards for nutritional needs. Some may have better Omega 6:3 ratios than others. Ideally, you want a ratio of 5:1 or less. It's never a bad idea to add the Omega 3 fatty acids DHA and EPA to your dog's diet, (found in fish oil supplements) but you don;t have to do so for a normal healthy dog.

I just looked at a few Zignature formulas at random. The turkey formula has an Omega 6:3 ratio of 4 to 1, so no supplementation is needed. The pork formula's ratio is more than 6 to 1, so if you used that one, you would do well to supplement with fish oil. Any fish based formula is going to have a good ratio. With the meat or poultry based formulas, you'll need to check the ratios for each one individually.

Dinah (18 mo.) really likes it, and since switching from breeders choice of puppy food..Taste of the Wild high prairie puppy she has either out grown her eye goop or it has stopped because of the switch.  Happened too close to call.  She even needs an eye trim! And no goop!  I would be hard pressed to switch back...just to See. 

We recently transitioned to Zignature as well from Orijen very successfully. Ruby started with the turkey and now is enjoying the lamb. I supplement hers with fish oil due to her allergies anyway, regardless of the omega 6:3 ratios because she needs the added help for her skin. I was going to go with Fromm but the big pet food store in town doesn’t carry it and I would have to special order it. But, we are very happy with the Zignature so far.
