Ginger is 5 months old today and she has this adorable scruffy coat. As soon as I brush her she starts to get scruffy again. She has a thicker shorter caramel color coat under a longer whispy cream fringe. It is really quite cute and I am curious if anyone else has seen this with their doodle. She is a F1b.

Not the same but Luna's hairs were always a different colour underneath than at the tips. Her undercoat was white and most hairs tapered to apricot/red at the tips. Looks like Ginger might have the reverse with darker inside and cream tips :)
Luna was a beautiful girl, such a pretty color.
Clancy's undercoat was dark apricot with the top being cream. As he has aged, he has become a light apricot/cream. He is a goldendoodle. My Ned is a multigenerational labradoodle, and at certain ages in his life, his coat was darker closer to the skin. He has lightened overall now and he's a lighter apricot all over. I'll bet when you finally groom him, he will have more of the undercoat color. She is adorable. That scruffy look is my favorite of the doodle coats.
Our F1 mini goldendoodle puppy started fluffy but soon lost a lot of hair and became patchy with a darker undercoat and wispy blonde longer top coat. You can see the transition in the images below. I've also added another photo taken last week at 6.5 months old that shows what he looks like after having a groom - unfortunately, the groomer clipped all the whispy away which was unfortunate but overall he looks more symmetrical now. His undercoat is really soft and once it grows out a bit more I'm thinking he'll stay one toned but who knows!
