Why is it that my doodle doesn't have a "good #2" unless it is after a activity. For example... we only see "good" ones after or during 30 minutes of throwing the ball at the ball diamonds... I find this strange!

Well, in people, exercise increases intestinal activity and accelerates intestinal transit time. People who don't move much usually have problems with constipation. I'm thinking it may be the same with dogs.
We get slimy #2s sometimes if she is super excited. Like at the dog park! That is the only time....
Dog Parks bring that out in Remington too... Literally!
There is a syndrome among human exercisers called "runner's diarrhea"; while the exact causes vary, it is believed to be a combination of having eaten within 2 hours prior to a run, not being sufficiently hydrated, and the fact that strenuous activity directs blood flow away from the intestines. Some or all of these factors could apply to dogs as well.
I have quite the embarrassing story about JUST that happening to me on a run...no pun intended.
Please tell me this diarrhea is not during the run! LOL! My DH is one of those crazy obsessed joggers....regularly doing over 10K .....he had to stop at the public toilet on the seawalk one time while on holidays last month and it wrecks the "zone". LOL
Hmmmm...dog parks and lots of activity ruined my dogs' #2's. They usually got to soft that way.
