St. Paddy's is coming right up and as usual I'll be making corned beef with cabbage, red potoates and carrots.  Yummy if I do say and I'll be having guests as well.  It ocurred to me that now that I know Nicky - my first really Irish friend - that perhaps I should also make an authentic Irish dessert.  I have no clue what that might be.  I'm actually a better baker than I am a cook so this might be fun.  So - I'm asking Nicky to enlighten me on Irish desserts - I'm guessing Baileys Irish Cream doesnt' qualify - lol.  Or any others of you of Irish decent - what is your favorite Irish dessert receipe?

Nicky - Dori and I REALLY are coming over for a trip in 2013 so we'll need lots of your help in planning AND of course we will want to meet you and Riley!!!!!  I can't wait.

Of course you'll get lots of help, we can't wait to have you here.  I have lots of ideas to gather together for you.

Bannoffee Pie is a big Irish favorite 

Irish Banoffee Pie

Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1 cup butter
  • 1/2 cup turbinado sugar
  • 3 Tsp. ground ginger

Filling:

  • 1 (14-oz.) can sweetened condensed milk
  • 2 bananas, sliced
  • 2 cups whipping cream

For crust: Mix graham cracker crumbs, sugar, melted butter, and ginger until well blended. Press mixture into a ninee-inch pie plate and cool in refrigerator.

For filling: In a saucepan, boil an unopened can of sweetened condensed milk (not evaporated milk!) in water for three hours. Monitor closely to make sure there is always water in the pan. Remove can from heat and let cool 10 to 15 minutes. Open can and pour toffee into pie crust. Allow to cool.

Slice bananas over toffee.

Whip the two cups of cream and spoon on top of bananas. Refrigerate before serving.

This looks so good....now it's a tie between this and the Guinness cupcakes.

I guess you and I must be the only ones who like cheesecake, lol.

If you do the cupcakes, please put green sprinkles on them!

 

id go with the cheesecake - i love cheesecake and had an irish cream cheesecake at a restaurant a few weeks ago - it was to die for!

One of our top food critics Tom Doorly who writes for the Irish Times has just sent me a message to say that the only truly Irish dessert is a pudding made with Carrigeen Moss which is actually seaweed!  So... I'm thinking that a) I can go to the coast, procure said same seaweed and have it shipped to you or   b) You go with a newer modern "Irish dessert" and choose one of the delectable recipes that are already here!

Here's a recipe!

CARRAGEEN PUDDING

1/2 cup Dried carrageen (seaweed)
2 Tablespoons Honey
Lemon juice and grated rind (you may substitute vanilla to taste)
Egg white, beaten stiff
150 milliliters Heavy cream, whipped

Soak the carrageen (small rock seaweed- it grows on the small rocks in tidal pools along the sea shore. It is a thickening agent!) in hot water to cover for about 15 minutes (or reconstitute according to package instructions), then drain discarding the soaking liquid. Put into 600 ml fresh water with the honey, lemon juice and rind. Bring to a boil and simmer for 25-30 minutes. Strain and discard the carrageen, and let the liquid cool slightly. Meanwhile, combine the beaten egg white and the whipped cream, then gently fold the mixture into the carrageen liquid. Pour into a greased mold and chill.

(Carrageen [or "carrageenan"] -look for it in health food stores!.)

What a fun post...and So many wonderful recipes to choose from...

Here's something that's a "No Bake'..."Quick and Easy"...and "Very Yummy" treat that I wanted to add...

It looks fun and festive and brings a smile to everyone's face!    You can get people involved if you like...or not (smile)

It really does make a party Fun!

It's called a " Black and Tan Ice Cream Float " or " A Guinness Float"...

I first saw this recipe on the Today Morning Show. 

 One of the top New York restaurants were serving this on St. Patricks Day!  (can't remember which one now)

 

Just pour a Black and Tan Beer or a Guinness Beer in a tall glass... (they used the Black and Tan)

Add a scoop ( or two)  of your favorite (very good) vanilla ice cream...

Place a straw in the glass...and prepare  to enjoy this Amazing Adult Ice Cream Float!  Very Yummy...

 

We've served this to friends...and Everyone loved them!!

Be careful...They Are Addictive!!  Lol...

 

That sounds good, maybe we will have a real Irish drink in Ireland sometime in the future?
