I think I have found a mini goldendoodle that I want, but can anyone tell me if it will darken or get lighter with age?

 

Also if it is a curlier coat now, what will the coat look like as it ages?

Most lighten, few darken.
If it is curly now it will probably be at least as curly later.
Most doodles lighten. Some who start as apricot actually lighten to cream. Some chocolates look black but lighten and change as they mature.  Often I have noticed the before and after pics (pup/adult) show the adult curlier than they were as puppies.  I think that my doodle has stayed about the same in coat type. He started out as apricot with dark ears and tail but those faded out to the apricot color the rest of his body is.  Then the apricot faded some, darkened some and faded some again.  He is still apricot though with a straighter coat except under his chin.
I think it's tough to say....Guinness has definitely darkened and so far Murph has stayed about the same.  My two kept the same basic coat texture as when they were puppies.

You can tell by looking at the roots, most will lighten and few will darken. Ask the breeder they should know their lines well enough to be able to tell you however I am disappointed this morning I followed a google ad to a breeder's website and they show a creme male listed as red (clearly not red) and last week an ad on ebay for a creme puppy listed as red.

As far as being curly now, it will be even curlier when it gets older 

One of mine went from dark apricot to light apricot and the other from cream to white.  Lucy's hair stayed wavy, and Ethel's went from straight to curly.

Here is a picture...the one on the right is the one I am thinking about. I have always liked darker brown or red doodles, so I am hesitant (I know all doodles are cute)...do you all think this little gal will turn white or remain brownish?

both will likely lighten to almost creme white with apricot ears (neither are brownish)
I highly doubt she will turn white, but she will most likely lighten up to apricot.  She is a cutie!

Ethel was cream when we got her, and is now white.

Darwin got curlier and lighter with age.
Our dogs were both dark when they were pups. They are now both pretty light.
