Cooper has Presidents Choice (PC) pet insurance (Canada). She recently had an ear infection. I havent submitted the receipts, as the total amount doesnt go over our $100 deductible, but I was wondering maybe I should. Would future ear infections be clumped together as the same illness, or would it be classed as a new one and we would still have to pay the first $100 for each infection?

anyone had any experience with PC?

I don't have PC, but I do think you should submit the claim. They need to be able to apply that amount toward your deductible. I can't speak to your other question, but I hope someone here can.
I have PC pet insurance, and up until this year it was always a $100 deductible per year. I noticed this year it has changed to $100 deductible per condition per year (not very happy I wasn't informed of this change). So, I would submit your receipt, because it will go towards your deductible if you have to see the vet again. I think you have six months to submit, so you could also wait a bit, incase you end up getting more treatment, and then submit it all together.
