Female vs male???

Hi, we are researching and learning as much as we can about the GD breed and have had several breeders comment that they have a higher demand for females when I mention I am not particular either way, just want as "calm" a doodle as one can predict by 8 wks old. what, if any are the differences in temperment, behaviors, health? Anything? I am planning on adopting in Jan. as we are traveling Nov-Jan. Thanks to all for any input.
