Super easy chocolate mint cookies. Or any kind of cake mix flavor...

 

One of my favorite kinds of cookies is the very well known chocolate mint.

The combination of the rich chocolate and the refreshing mint is… delightful. Anyways, since I really don’t like complicated recipes, I only use one for these kinds of cookies. And it’s easy. Super easy.

Easy Peasy Chocolate Mint Cookies

1 chocolate cake mix

2 eggs

1/2 cup oil

mint chips or chopped up Andes mints

Mix the cake mix, oil, and eggs together. Then add the chips. Roll into balls, plop them on a cookie sheet and put them in the oven at 350 degrees for 10-12 minutes. Don’t over bake.

That is it! Easy right? The best part is, you can use any combination you want. Any cake mix, any chips. You could even use nuts. I am partial to spice cake mix with semi-sweet chips, but Funfetti with white chocolate chips is also delicious.

This is one of my absolute favorite treats to make! They are great to take to parties, give as gifts, or just munch on. 

 

Cake Balls/Truffles

1 box of cake mix (cook as directed on box for 13 X 9 cake) 
1 can  frosting (16 oz.) 
1 package white or chocolate bark. You can also use candy melts if you want different colors.

Directions

1. After cake is cooked and cooled completely, crumble into large bowl. It should be crumbled to a fine texture.
2. Mix thoroughly with 1 can  frosting. You may want to start with half a can first, then add more if needed. (It may be easier to use fingers to mix together, but be warned it will get messy.) the consistency should hold together but be easy to roll into balls.
3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. 
4. Chill in the fridge for several hours. I don't recommend freezing them because they can expand and crack the coating after you have dipped them.

 

You can also use a homemade cake and/or homemade frosting. However, if you are using homemade frosting you might want to add less to the cake crumble mixture.

 

Dip in bark, chocolate or candy melts and decorate! here are some cake balls I've made. It shows exactly how much variation you can use while decorating. It's so fun to find candies, sprinkles, etc to decorate them with!

White cake/ vanilla frosting "cupcake bites", and chocolate cake/chocolate frosting ones for thanksgiving...

These look incredible! You make it sound so easy...I think I could pull off the mini cupcakes, not so sure about the turkey or pumpkins, but I guess it's all about practice!
Weirdly, the Turkeys were the easiest! It is definitely easier to do more complex designs after practice, but the great thing is you can make them as complex or basic as you want.

Here is a more basic design, just dipped and drizzled.

How about a good chili recipe?  Mine is nothing fancy, but I always get rave reviews:

 

1 pound ground beef (don't use too lean - I use about 90/10)

1 medium white onion

1 1/2 to 2 cans Ranch Style Beans (in black can with white writing - you can substitute chili beans if you can't find)

1 can Rotel tomatoes (I use the "chili fixins" one)

8 oz. tomato sauce

1 packet Chili seasoning

1 cup water

2 T chili powder

3-4 dashes cayenne pepper

salt, pepper to taste

 

1. Brown beef and onion.  Do not drain fat.

2. Add in remaining ingredients and simmer over low heat for 1-2 hours (the longer, the better!)

 

Enjoy!

Yummm! On a day like today, a good bowl of chili sounds really good!!
I love chili! It's one of my "clean out the fridge" standbys. I've tried lots of different ingredients in addition to the standard ones, green beans, finely cubed squash, corn, mushrooms, peppers, carrots, spinach, jalapenos, chipotle, lots of garlic. I also use any kind of meat, chicken, lamb, cubed pork chop. Chopped avocado on top.  I can honestly say my husband and I have enjoyed every version we've come up with - my best recommendation is to use stock when you have it, instead of water, and a slow cooker so you can start it the night before or in the morning. Awesome idea Allyson!
Yum, this sounds good for dinner tonight. :-)
