So, with Easter right around the corner, I dug out my pupcake recipe and will be making Coop and all of the extended family dogs pupcakes for them to enjoy on the big day! The recipe follows. I decorate them with a few turkey bacon crumbles. They LOVE them! And I love the frosting faces when they are finished. :)


Apple Pupcakes



1 large apple
1½ cups whole wheat flour
¼ cup oatmeal
2 teaspoons of baking powder
½ teaspoon of baking soda
½ cup plain yogurt
½ cup water
¼ cup vegetable oil
2 tablespoons of honey
2 eggs
1 cup grated cheese

FROSTING:


18oz lowfat cream cheese
2 tablespoons plain yogurt
2 tablespoons of honey





Preheat oven at 375 degrees Grease muffin tins.


Core, slice and mince the apple. Set aside.


In a large bowl, mix flour, oatmeal, baking powder and baking soda together.


In a medium bowl, blend the yogurt, water, oil, honey and eggs together. Then stir in the apple and cheese. Add to the flour mixture and stir until mixed. Spoon
into the muffin tins, filling each cup about three quarters full.


Bake for about 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.


Let rest in the muffin tins for a few minutes, then remove and set aside.



For the frosting, combine the cream cheese (at room temperature), honey and yogurt until smooth. Spread on the pupcakes.



Makes about 16 pupcakes. If you prefer a single-layer cake, spoon the batter into a sheet pan and bake for an extra 10 minutes. Let cool before serving. Keep in airtight container.

I don't see anything in the ingredients that are not good for us. That must mean we can eat them too!!!!! They sound very yummy!

About the replacement of wheat flour with oat flour, I would think that would be fine! I have done some tinkering with this recipe and it always seems to come out great. I sometimes use some apple sauce instead of some of the oil - although this recipe contains very little - and they still come out ok, but do stick to the pan sometimes...
I have also used some grated carrots in place of some of the cheese or apple. This recipe is very forgiving, so go ahead and try it!

Great recipe , could I replace the wheat flour with oat flour ? Jasper has a wheat allergy .
