Don't you hate coming home and the first words to welcome you are, "What's for dinner, we're starving". I usually start thinking about whatever is the quickest and easiest thing I can fix for dinner, but I am always looking for new suggestions.
1. Place the couscous in a large bowl and pour 1 ½ cups hot tap water over the top. Cover and let stand for 5 minutes; fluff with a fork.
2. Form the beef into 12 small ½-inch-thick patties. Sprinkle with the cumin, oregano, 1 teaspoon salt, and ¼ teaspoon pepper.
3. Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the patties and cook to the desired doneness, 4 minutes per side for medium.
4. Toss the couscous with the scallions, tomatoes, cucumber, lemon juice, the remaining 3 tablespoons of oil, 1 ¼ teaspoons salt, and ¼ teaspoon pepper. Serve with the burgers and hummus, if using.
This is one of my favorites - it was from Real Simple also:
Bacon/Parmesan Ravioli
1 large package Buitoni (or something similar) 4 cheese ravioli (or two small - to serve 4 or 5 people)
8 slices center-cut bacon
2 garlic cloves, diced (not minced!)
1/4 c reserve water from pasta
12 oz. frozen peas
1/4 cup parmesan cheese
1. Cook Ravioli according to package directions. Remember to reserve about 1/4 cup of the water after it cooks.
2. Meanwhile, pan fry bacon. After it cooks, set aside, pat dry, and crumble.
3. Cook garlic dices in bacon juice on medium.
4. Add frozen peas and stir until cooked. Keep warm.
5. After draining the pasta, combine it with the frozen pea mixture, add the bacon and 1/4c reserve water.
6. Serve immediately and top with parmesan cheese.
