Violet chews on her ears ....mostly when laying down and relaxing .. anyone have a similar baby doing this ?

Ours chews on her tail sometimes and tries to chase it but never her ears...Doodles have such crazy habits...but they are so adorable!

I would say any chewing of body parts is bad news.  If she swallows enough hair it could cause an obstruction and it could also irritate the skin on her ears. 

Have you tried bitter spray to keep her from doing it?  

Not yet ..she does not do it all the time and last night I found a small amount of fur on my bed after I put her in her bed...

so she is not eating it...she chewed the ftont of her paws when she was younger and the vet ruled out allergy or food problems

If I was guessing, and I am, it sounds like a comforting type of behavior. Kind of like a person that twirls their own hair, or a thumb sucker.

Can you redirect her chewing to a bully stick or other type of chew?

They must be long ears!
I hope you can get her to stop this habit

Oscar use to do this when he was younger and I left his ears longer. He would chew them until the hair turned into a soft mush and I could just pull the soaking mats off. It was disgusting. Now I keep his ear hair short (he still has very long ear leather, though). At least now he can't reach his ears. Here's a pic of how long his ears were:
