I think Safari is a good brand. I've never used their nail clippers but I have a few other Safari tools and really like their quality. I have a JW Softgrip Guillotine style clipper that I like, but have nothing to compare it to. The cut itself is a pretty sharp and quiet one. The sound of the nail being clipped can be an issue for some dogs. I just wish there were a clipper that could detect the quick, as I've hit it a couple times on the doods. I always keep styptic powder close by to quickly dip the nail into to stop the bleeding. Most of my doods' nails are black so its really a guess as to where the quick is. I use a flashlight to do my best to find them, and usually I avoid them, but accidents do happen. Cutting nails is probably my least favorite part of dog grooming.
Safari nail clippers are fine. I've used them in the past, although I have a JW right now (for when I'm feeling too lazy to use the Dremel). I definitely prefer the guillotine style to the scissor style, mainly because you can replace the blade when it starts to dull. Using a dull blade pinches the nail and that can be uncomfortable.
The flinching is normal and can be caused by the unusual sound or feeling, or just because some dogs (looking at Lachlan here) have dainty little ticklish tootsies and feel this overwhelming urge to check and make sure you haven't amputated anything important. *grin*
