Where does the "wispy" hair come from? Can we talk doodle coat type?

Another random genetic question if it can be answered. Where does the wispy or light and fluffy hair that does not shed come from in a doodle? 2 of my doodles have this kind of hair. It's very soft, fluffy hair, like I said, wispy. But it mats so, so bad. Jake doesn't seem to have it. He has a very curly cost, the strands are fine but he has tons of them . His is curly but coarse. Both of my creams seem to have this very fine, angel like tuft stuff. Brisby has it everywhere, Mac has it almost everywhere except his topline across his back which is coarse. This hair I'm talking about is so soft, almost like cotton but wavy or straight. Yet it doesn't shed off like normal dogs so when it does come loose, it's mats big time. I have to brush the cream boys daily to avoid mats and I keep them cut on the shorter side ( about 1 1/2 inches). where does this crazy light and fluffy hair come from that is a mat magnet? It's soft but man the upkeep!

See to me this makes sense. I was wondering if Goldens and some other mix for the ALDs had an undercoat and some Dogs just get a full coat of undercoat Because this fur/hair seems like that light undercoat type of hair yet it's all over the body. I'm not sure how you guys do it but I have to keep them clipped very short on the underbelly and "arm pits" and the inside of legs. On the rest of the body except face they are kept at 1/2 to 1 inch cut but any longer and watch out.
Mac is growing hair/fur really fast. He is Growing what seems to be a much healthier coat now that he's on a good diet but it's thick and very fluffy. It's so thick I really can't believe it. I thought jakes coat would be the most difficult to clip but it's not. Even though he has the true poodle coat, you just wash, blow him into a giant fluff ball and the clippers glide right through. I haven't been able to clip Mac in just one day yet. He is a multi day groom job.
Cocoa sure has this. She has a very high-maintenance coat of hair. It feels incredible to pet, but that soft fur is constantly matting. She's an ALD, and I've always assumed that there's some cocker spaniel or some other type of spaniel mixed in which gives the fur its soft texture. Combine it with the poodle waves, and voila- a masterpiece of soft, wavy, beautiful hair that mats!

Mine is the very same way. She is an f1b, so she is 3/4 poodle. I had a golden 15 years ago and his hair was nothing like that. He was a rescue, so he may not have been a purebred golden, but he looked like one.
