There's a three hour time difference from Breeders' home to mine, (West Coast --> East Coast), do dogs experience jet-lag at all I wonder.....hmmmmm.....And if they did, what would the symptoms be?

It will be 3 hours earlier to maybe Sable will be up to all hours!! LOL
The DRC just had a dog shipped from NV to NJ via Houston, on Continental and when Bridget got here she was absolutely fine. She licked us, walked on her leash out of the airport and sat nice in the 2 hour car ride to CT. The puppy will probably sleep the whole plane trip and be raring to go when he arrives.
Good question, but since puppies sleep so much at first and as tired as he'll be from the trip, I'd think you;d have no problems with bedtime. Ours was shipped with a 2 hour time diff. Can;t say we noticed anything. And our doodle has traveled to 3 different time zones with us as an older puppy, and there never has been a problem with his sleep patterns. He sleeps when we do and gets up when we do. No matter what state we are in.
Do they medicate dogs for these long flights? If so then medication might have an affect on Sable.
I never heard of any dogs getting jet lag, don't think they really have a sense of time like we do so it does not affect them. A friend traveled with her dog from PA to Kansas and she did great. I don't know if you really would want to give a puppy that young benadryl or something like it. When you go to pick her up, I would take a few towels along just in case she gets car sickness on the way home, and some bottled water and a travel dog bowl for a drink.
A friend here on Doodle Kisses also recommends taking wipes along to clean the puppy up a bit in case he or she has had to pee or poo in flight. While they don't usually soil their crates, a long flight can be an exception to that.
Just want to say, what a lucky puppy she is, to be raised on a big farm with a loving family. Nancy, I am so incredibly happy for you!
I suppose it's possible, but I'd imagine if they did it would be far less than what we experience. Part of our problem is we KNOW the time and expect things at certain times of the day...your pup will have far less such expectations. Pup should be fine =)
Both my dogs were shipped from the west to the east coast and came through just fine. Calla even had one stop on the way and she was fine. The airport had a bit of a scrub down, by me, after she relieved herself of all she had collected in those hours in transit! Both dogs were hungry and thirsty when they got home and tired soon crashed. Within a day or so adjusted to a reasonable schedule. I really saw no evidence of jet lag.,
We got our female doodle from Georgia (we live in California) and it took her a few weeks to adjust to west coast time. She was up every morning at 3am, bright-eyed and ready to start the day! Hahaha! But eventually she got used to the new schedule. I imagine going from west to east will be a lot easier. Maybe your puppy will even sleep in a little. :)
Most humans say they drink extra water to help with jet lag. As always, dogs need plenty of fresh water daily. If you do notice a sluggish dog add more water? Just a guess.
