Food Questions - itchy doodle

I'm new here and have spent HOURS reading posts on food questions, concerns and recommendations. What a great site this is (and it's a bonus to see so many cute dog pictures!).

I have a doodle that needs wheat-free food - his stomach is pretty sensitive - seems he can't have anything too rich (eg. duck). I question if he has a sensitivity to chicken but don't know for sure. I know he chews himself bloody if he eats wheat.

He's currently on a grain free salmon & potato formula but he poops A LOT and seems to still be quite itchy and man, does he shed (!!!!) so I'm thinking there's got to be a better choice for him food-wise.

I've read that a lot of you recommend TOTW, Orijen or Acana...  What do you use?  Why do you like it? Did your doodle have issues that got resolved with the correct food?  Suggestions appreciated!

Edit:  My vet wants me to try him on THEIR Hills D&D Prescription Diet (of course they do).  Do I bite the bullet and try their expensive food?  I don't mind spending the money on him, I just don't agree with buying food from the vet as I think it's ridiculously overpriced.

Thanks!  I hadn't even seen the "Groups" yet so I'll delete my message altogether and read more there!  I had only searched messages so this is a big help, thanks again.
