Since I have curly/wooly coated doodles, and I hate dealing with massive, all-over mats, I like to keep my two's bodies short. I like a distinctive 'doodle' look, though, so I keep the tail, beard and legs longer. How do you like your doodle to look? Its all very personal and subjective, and I think everyone has a slightly different preference.
I like about 1.5 inches to 3 inches in hair length. I prefer everything to be relatively even all over (so if body is short, head should be short). I also like ear hair layered and NOT blunt cut...same for hair than hangs from snout...layered.
I use to feel the same about the ears, and when one day Lucy came home from the groomer's with blunt cut ears, I HATED it. Over time, though, the look really grew on me, and it became (at least to us) her signature look. She's back to layered ears now. Not because of any preference, but because Oscar took care of all that thick ear hair and she'll never be the same again. Here she is before Oscar pulled out 50% of her ear hair:

I must say that your picture of Brisby with his stuffy is the perfect doodle "look" in my opinion! He is as handsome as they come!
Oh, I love the shaggy look, which is what I thought I'd do with Gracie. But she has curlier hair and I tend to keep her short, maybe 1 1/2 inch. Grooming her twice a week,I'm always evening her out. Plus no mats! I should say that I would love her even if she were bald....Doodle kids are special, however they turn out!
Darwin is handsome in the bottom pic, but in that first pic he is absolutely STRIKING looking.
That is a good example of layering the hairs so they fall naturally.
